Our Favorite Mussel Recipes
36 fresh steamed mussels
1/2 green pepper, chopped
2 tablespoons finely chopped onion
2 tablespoons chopped pimiento
1 teaspoon prepared horseradish
Dash of hot-pepper sauce
3 tablespoons softened butter or margarine
3 strips lean bacon, each cut in 1 inch squares
1 lemon cut in 6 wedges
Parsley sprigs for garnish
Remove mussels and discard half the shells. Spread layer of rock salt in large shallow baking pan suitable for taking to the table or in 6 individual baking dishes. Set mussels, each in a half shell, in the salt.
Blend green pepper, onion, pimiento, horseradish, and hot-pepper sauce into butter. Put a dollop of butter mixture and then a bacon piece on each mussel.
Broil 4 inches below preheated broiler for 6 to 8 minutes, or until bacon is crisp.
Garnish with lemon and parsley.
